It's berry easy to make this flavor and NUTrition-packed salad a staple on your lunch or dinner menu. 🍓 Tip: Double the Citrus Honey Dressing recipe so you have extra on hand — thanks to our California Almond Oil's high smoke point, it also makes a yummy marinade for grilling and roasting.
INGREDIENTS
SALAD
1 1/2 cups cooked quinoa 1 1/2 cups strawberries, cut in half 1/2 cup raspberries 1/2 cup blackberries 1/2 cup blueberries 1 tablespoon finely chopped mint 1 tablespoon finely chopped basil Arugula or greens of choice
CITRUS HONEY DRESSING
1/3 cup Octonuts California Almond Oil 1 tsp orange zest 4 tbsp fresh orange juice 3 tbsp fresh lemon juice 1 tbsp honey (or sweetener of choice, like date or maple syrup) 1 tbsp finely chopped mint 1 tbsp finely chopped basil
HOW TO
Prepare the quinoa according to package instructions. Quinoa cooks quickly and can also be prepared ahead of time.
Prepare dressing by combining all ingredients and blending. This can also be done ahead of time.
Combine quinoa, berries, mint and basil. Drizzle with dressing to taste, toss and serve over a bed of greens.
TIP: Swap out the berries for your preferred fruit or whatever you have on hand.
