You can have it all: Creamy, dairy free popsicles that are berry delicious and packed with plant protein from California almondsand loaded with nature's NUTrients—these frozen treats are a warm weather must-make! ☀️
INGREDIENTS
1 cup raw cashews (soaked for 5 hours or overnight) 1 cup coconut milk (in a can, the creamy part) 1/3 cup Octonuts California Almond Protein Powder 1/2 cup dairy free white chocolate, melted 1/4 cup cocoa butter 2 tsp pure vanilla extract Sweetener (to taste) 1 cup mixed berries
HOW TO
Soak the cashews overnight, or at least for 5 hours.
Put the cashews in a food processor or blender and blend until creamy. Add the coconut milk, almond powder, melted white chocolate, melted cocoa butter, vanilla extract, and sweetener of choice, then blend until combined.
Take 1/2 of the mixture out of the blender. Add 1/2 cup berries to the rest. Blend until combined.
Place 1/2 cup of the remaining berries in the popsicle mold, pour both mixtures into the mold and freeze.
Remove the popsicles from the molds. Drizzle with chocolate and add your favorite toppings (nuts, sprinkles, granola etc). Edible flowers also add a beautiful touch.
