INGREDIENTS
1 eggā£ 1 tbsp ground flaxseedā£ 2 tsp fresh lemon juiceā£ 1 1/2 cup milk 1 cupĀ OctonutsĀ Vanilla Almond Protein Powder 1 cup brown rice flour ā£ 2 tsp baking powderā£ Ā½ tsp saltā£ Ā½ tsp cinnamonā£ Ā½ cup sugarā£ Ā¼ cup OctonutsĀ California Cold Pressed Almond Oil 1 tsp vanillaā£ 1 cup finely diced ripe mangoā£ Ā½ cup unsweetened shredded coconutā£
HOW TO
Combine everything in a medium-size bowl, pour into a lined muffin pan, top with extra shredded coconut, mango pieces and crushed almonds or pecans. ā£
Bake at 350F for 23-25 minutes, or until itās slightly browned at the edges.
