Mango Coconut Protein Muffins

INGREDIENTS

1 egg⁣
1 tbsp ground flaxseed⁣
2 tsp fresh lemon juice⁣
1 1/2 cup milk
1 cupĀ OctonutsĀ Vanilla Almond Protein Powder
1 cup brown rice flour ⁣
2 tsp baking powder⁣
½ tsp salt⁣
½ tsp cinnamon⁣
½ cup sugar⁣
¼ cup Octonuts California Cold Pressed Almond Oil
1 tsp vanilla⁣
1 cup finely diced ripe mango⁣
½ cup unsweetened shredded coconut⁣

HOW TO

Combine everything in a medium-size bowl, pour into a lined muffin pan, top with extra shredded coconut, mango pieces and crushed almonds or pecans. ⁣

Bake at 350F for 23-25 minutes, or until it’s slightly browned at the edges.
