1 tbsp ground flaxseed
2 tsp fresh lemon juice
1 1/2 cup milk
1 cup Octonuts Vanilla Almond Protein Powder
1 cup brown rice flour
2 tsp baking powder
½ tsp salt
½ tsp cinnamon
½ cup sugar
¼ cup Octonuts California Cold Pressed Almond Oil
1 tsp vanilla
1 cup finely diced ripe mango
½ cup unsweetened shredded coconut
Combine everything in a medium-size bowl, pour into a lined muffin pan, top with extra shredded coconut, mango pieces and crushed almonds or pecans.
