3 ripe bananas
3/4 cup dark brown sugar
2 large eggs, whisked
1/2 cup oil (try our Cold Pressed California Walnut Oil) or 1 stick melted butter
2 cups Octonuts California Walnut Protein Powder
1 tsp baking powder
1 tsp baking soda
1 tsp xanthan gum
1/2 tsp salt
1/2 cup mini chocolate chips (optional)
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees F.
In a large bowl, mash the bananas. Add brown sugar, eggs, and oil.
Mix in the Octonuts Walnut Protein Powder, and the rest of the dry ingredients. Fold in chocolate chips and nuts (optional).
Fill prepared muffin cups halfway. Bake for 18-22 minutes.
