Plant-tastic friends, we have our arms around you! 🐙 To show how easy it is to adapt the recipes on our Almond Protein Pancake & Waffle Mix jar, we partnered with Annette of Azure Farm to create these kid-approved, vegan pancake and waffle variations.
2 cups Octonuts Almond Protein Pancake & Waffle Mix 1 can full fat coconut milk 1 Tbsp baking powder
HOW TO
Combine all ingredients and mix well. Pour onto a greased Belgian waffle maker. Cook on medium to high heat for about 4 minutes.
Makes 4 large waffles, or 6 medium sized waffles.
For the waffles pictured here, I added a cup of fresh chopped strawberries as well! Mix well into batter before cooking.
VEGAN PANCAKES
INGREDIENTS
1 cup Octonuts Almond Protein Pancake & Waffle Mix 2/3 and 1 Tbsp preferred milk ( coconut, almond, etc) 2 Tbsp Octonuts California Almond Oil 2 flax seed eggs (1 flax seed egg = 1 tbsp ground flax seeds mixed with 2 tbsp hot water)
HOW TO
Mix well and let sit for 10 min before using DIRECTIONS Batter will be slightly thick. Pour onto greased skillet on low to medium heat. Let bubble and cook on one side before flipping. Makes 6-8 small-medium sized pancakes.
STRAWBERRY SAUCE
INGREDIENTS
2 cups of fresh chopped strawberries 2 tbsp maple syrup 1 tbsp fresh lemon
HOW TO
Mix all ingredients on stovetop and bring to a boil. Cook for about 15 minutes until it reduces down and thickens. Serve over waffles or pancakes.
