2 cups Octonuts Almond Protein Powder
1 Tablesppon baking soda
2/3 cup coconut sugar
1 stick grass fed butter, melted
1/2 cup dairy free yogurt
1 teaspoon vanilla
1/4 cup almond milk
1 cup blueberries
Preheat oven to 375 degrees and line a muffin tray with liners.
In a large mixing bowl or KitchenAid, add butter and eggs. Beat until mixed.
Sift in Octonuts Almond Protein Powder and stir to combine.
Add all remaining ingredients except blueberries. Stir to combine.
Fold in blueberries. Use a cookie scoop to scoop batter into liners.
Fill muffin liners 3/4 of the way full.
Bake for 16 to 18 minutes or until a toothpick inserted comes out clean.
Allow muffins to cool for 3 minutes in the pan before removing to a wire rack to cool completely.
