Octonuts Gluten Free Brownie Cookies

INGREDIENTS

1 stick unsalted butter
6 oz (~1 cup) dark chocolate chips (TIP: For Keto-friendly,Ā try Lily's Dark Chocolate Chips)
2Ā TBSP cocoa powderĀ 
2 eggs
½ tsp salt
1¼ cups Octonuts Chocolate Almond Protein Powder
1 tsp baking soda


HOW TO


Start by melting the stick ofĀ butter, then turn off the heat and add 6 oz of dark chocolate chips and 2 TBSP powdered cocoa. Mix well, set aside and let it cool slightly.

In a large bowl, add 2 eggs and 1/2 tsp salt. Beat with an electric mixer for at least 4-5 minutes. (This helps create a crinkly top layer when the cookies are baking.) Mix the melted chocolate and butter into the egg mixture.

Next, sift together 1¼ cups of Octonuts Chocolate Almond Protein Powder and 1 tsp of baking powder, then add to the wet ingredients. Mix until well combined. Cover the dough and chill at least 1 hour.

Preheat oven to 360 degrees. Scoop the dough into walnut-sized balls and placeĀ on a parchment paper lined cookie sheet. Bake the cookies for 7-10 minutes (less timeĀ = a more gooey cookie, moreĀ time = more crunchy).

Within a minute or two of cookies coming out of the oven, use the clean, flat, bottom of a glass to firmly press down on cookies to flatten. Optional: Sprinkle with a few flakes of sea salt and press lightly into the cookie.

Allow cookies to cool completely on baking sheet before enjoying.
