Sleigh all day at holiday gatherings and cookie exchanges with these gluten free orange-zesty sugar cookies made with our Vanilla Almond Protein Powder. There's also a low-sugar option!
1 1/4 cup brown rice flour -or- coconut flour
1 tsp xanthan gum
1/2 cup Octonuts Vanilla Almond Protein Powder
1/4 cup arrowroot starch -or- tapioca starch
1/4 cup cornstarch
3/4 cup butter, room temperature
1 cup granulated sugar -or- granulated monk fruit (low sugar option)
1 large egg
1/4 cup milk
1/2 tsp almond extract
2 tsp pure vanilla extract
Zest of one orange
In a medium bowl, mix the dry ingredients.
In another bowl, combine butter with sugar or monk fruit, and beat at high speed for two minutes until smooth and creamy. Add the egg, milk, extracts, and orange zest. Beat until combined.
Add dry ingredients to the wet ingredients and mix until just combined. Refrigerate for 30 minutes or until chilled firm.
Roll out the dough on a floured surface and cut using your preferred cookie cutter shape. Place on a pan lined with parchment paper. Bake at 350F for 12 minutes, until golden around the edges.
Decorate or dust with powdered sugar.
